Peppermint bark

Gratuitous recipe post: This turned out well, so I’m posting it here. It’s based on three or four things I found online, with an extra pinch of Red Fork Hippie Chick laziness mixed in:

Peppermint bark

1 bag Nestle white chocolate chips
1 bag Nestle semi-sweet mini-morsels
1 bag peppermints
1/2 tsp. peppermint extract
2 tbsp. canola oil

Unwrap the peppermints, put them in a ziplock bag, and pound the bag with something heavy to smash them up. Put 1 tbsp. of canola oil and all of the white chocolate chips in a bowl and melt them in the microwave. (Nuke 30 seconds, stir, and repeat until candy is completely melted.) Stir 1/4 tsp. peppermint extract into the melted candy. Spread melted candy evenly over a cookie sheet covered with waxed paper.

Sprinkle crushed mints evenly over white chocolate and place cookie sheet in the freezer for a few minutes to let the chocolate set up.

Melt the semisweet chocolate chips with the remaining oil, stir the remaining peppermint extract into the melted chocolate, and spread it over the cooled candy.

Return cookie sheet to freezer for a few more minutes until chocolate hardens. Break into pieces and store in a sealed container.
